The concept is simple and age-old. These ideal stovetop presses serve two purposes. First, they flatten meat, sandwiches, quesadillas, etc., for a more concentrated source of heat and they crisp the surface giving your dish a look that, in all likehood, your great-grandmother first enjoyed many years ago. In earlier years, these presses were strictly utilitarian in appearance (no time for such adornments as curves or scrolls) but today come in all shapes and sizes. You might easliy see one with a pig or cow etched in the body. Norpro and Lodge Mfg., both leaders in the cookware industry, have cast-iron bacon/grill presses that are heavy duty and easy to handle. If weight is in issue, try the aluminum grill press from Alegacy Manufacturing & Distribution Center which has served chefs since 1947.
